Gretchen’s Oatmeal
Chocolate Chip Cookies

I talk about them all the time, so here’s Gretchen’s recipe.

COOK TIME: 15 Min

INGREDIENTS:

  • 1 c all purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 sticks (1 c) softened butter

  • 1/2 c brown sugar

  • 3/4 c granulated sugar

  • 1 large egg

  • 1 tsp vanilla

  • 2 1/2 c rolled oats

  • 1 dark chocolate bar, roughly chopped

  • 1/4 c large milk chips

  • 1/4 c semi sweet chocolate chips

  • 1/4 c white chocolate pieces

INSTRUCTIONS:

  1. In a large bowl, cream together the softened butter and granulated sugar. Mix for 2-3 minutes until fluffy. Add the brown sugar and mix for a further 2 minutes. Add the egg and vanilla. Set aside.

  2. Sift the flour, baking soda, baking powder, and salt into a medium mixing bowl. Add the rolled oats.

  3. Chop the chocolate bar into 1/4 inch pieces, roughly. Be sure to reserve any shavings and add them to the cookie mixture.

  4. Gradually beat the dry mixture into the wet ingredients. When well combined add the chocolate pieces.

  5. Measure each cookie at 50 grams and roll into balls with your hands. Be sure to place one of the chocolate bar pieces atop the cookie for visual interest. Space them 2 inches apart. Place on a silicone mat, covering a cookie sheet.

  6. Refrigerate for 15 minutes. Meanwhile, preheat your oven to 325 degrees. Place chilled cookies in the oven on the middle rack and bake for 15 minutes. After baking, carefully remove the cookies to a cooling rack. They should be handled delicately.

  7. Allow to cool for 20 minutes before eating.
